Preparation

Preheat your fryer to 170°C (325°F).

In a pan with olive oil, add the ham in strips, the chopped onion and the sliced leek. Season with pepper and salt. Add the red pepper strips, mix everything and let it sauté for 2 to 3 minutes.

In a bowl, beat the eggs and cream. Add the grated cheese and sautéed ham. Mix everything.

Press the tortilla onto a fryer-safe plate. Add the grated cheese and cover with another tortilla. Pour the mixture over the top and sprinkle with grated cheese.

Place in the air fryer for 15 minutes at 160ºC until the tortilla is golden.
