INGREDIENTS:
- 1,270 kg spare ribs cut into pieces
- 250 g of streaky
- 1 kg of fresh or frozen broad beans
- 2 tablespoons of pepper paste
- 1 teaspoon pepper
- 4 bay leaves
- 500 ml of beer (white wine)
- 250 ml of olive oil
- 1 onion
- 4 cloves of garlic, chopped
- 1/2 beef chorizo, cut into slices
- 75 ml tomato pulp
- Salt and water to taste
PREPARATION:
In a bowl, season the ribs with the pepper paste, pepper, salt, bay leaves and beer. Wrap the meat well and leave it to marinate in the fridge for at least 1 hour (ideally the day before).
In a large pan, heat the olive oil, onion, chopped garlic and bay leaves. Stir and let it cook.
Add the meat chorizo, stir and let it fry. Add the ribs and pork belly and reserve the marinade. Stir and let it fry evenly.
Add the marinade and tomato paste. Stir and bring to a boil.
As soon as it starts to boil, add the broad beans. Stir, cover and let it heat well.
When it is very hot, add boiling water until it covers the beans. Adjust the salt, mix everything, cover and cook over medium heat for 45 minutes, until the broad beans are cooked. If necessary, add more water so that the beans do not become dry.
