Preparation

  1. In a bowl add the eggs. Beat the eggs. Add the diced chorizo, chopped onion, mix everything.

  2. Add the chopped parsley and mix everything together. Add the sliced olives and mix everything together.

  3. Season with salt, pepper and paprika. Wrap everything up very well.

  4. Let the pastry stay on medium heat for 2 minutes until golden.

  5. Reduce the heat and keep it low for about 5 minutes, or until the base of the omelette is golden and the sides are firm.

  6. When it is golden underneath, turn the pastry over using a plate. Increase the heat to brown the other side for 2 minutes.

  7. Reduce the heat, and let the pastry finish cooking for another 3 minutes, until golden.

  8. Remove from heat and transfer to a serving plate. Decorate with sprigs of parsley and serve with a fresh salad. And it's ready!
