Preparation

  1. In a bowl, beat the eggs. Add the chopped onion, parsley and mix everything together.

  2. Add the chorizo cut into small cubes and mix.

  3. Season with pepper and aromatic herbs. Wrap everything up very well.

  4. Place a frying pan over medium heat with oil.

  5. When the oil is heated, add the mixture and spread it well, so that the ingredients are even.

  6. Let the pastry stay on medium heat for 2 minutes until golden.

  7. Reduce the heat and keep it low for about 5 minutes, or until the base of the omelette is golden and the sides are firm.

  8. When it is golden underneath, turn the pastry over with the help of a spatula. Increase the heat to brown the other side for 2 minutes.

  9. Reduce the heat, and let the pastry finish cooking for another 3 minutes, until golden.

  10. Place on a plate and serve.
