INGREDIENTS:

  • 500 g cooked and shredded codfish (bacalhau)
  • 200 g shoestring fries (matchstick potatoes)
  • 4 bay leaves
  • 4 eggs
  • 2 onions
  • 5 garlic cloves
  • Olive oil to taste
  • Chopped parsley to taste
  • Pepper, sweet paprika and salt to taste
  • Sliced black olives to taste

PREPARATION:

In a pot with water, add the codfish, bay leaves, and garlic clove. Bring to a boil for 3 minutes, turn off the heat, and let it rest for 10 minutes.

In another pot, add a drizzle of olive oil, the onions cut into half-moons, the sliced garlic cloves, and the bay leaves. Season with pepper, sweet paprika, and salt, and sauté until the onion becomes soft.

In a bowl, beat the eggs and set aside.

Add the flaked codfish and mix everything well. Add the beaten eggs, folding everything together thoroughly. Cook slowly, without letting it dry out too much, until the eggs become creamy.

Add the shoestring fries and mix everything well. Turn off the heat, add the chopped parsley, and mix once more.

Transfer to a serving dish, garnish with black olives, egg slices, and parsley, and serve immediately.
