INGREDIENTS:

  • 15 egg yolks
  • 125 g of Gila candy
  • 125 g of ground almonds
  • 300 g of sugar
  • 200 ml of water
  • 1 tsp cinnamon powder
  • powdered sugar for sprinkling

PREPARATION:

Preheat the oven to 180ºC.

Bring a pan to low heat with the sugar and water. Let it boil for 10 minutes and remove from the heat.

Gradually add the chopped almond kernels to the sugar syrup and mix well. Add the gila jam, stir everything and heat for about 3 minutes. Remove from the heat and let it cool.

Add the egg yolks, mix everything together. Add the cinnamon powder and heat again, stirring constantly until it comes off the bottom of the pan.

Pour the mixture into an open mold, previously greased with butter and sprinkled with flour and with a circle of parchment paper. Place in a preheated oven at 180ºC for 40 minutes.

Check the doneness with a toothpick, remove from the oven, unmold, let cool and sprinkle with powdered sugar.
