INGREDIENTS:
- 2 cod fillets
- 900 g of peeled potatoes
- 4 eggs
- 3 Tbsp olive oil
- 2 onions
- 2 bay leaves
- 6 cloves of garlic
- 550 g of leaf spinach
- 1 tbsp (tea) pepper
- 1 Tbsp (tea) nutmeg
- 50 g of olives
- 2 tbsp (soup) flour
- 200 ml cooking cream
- 200 ml cod cooking water
PREPARATION:
In a pan with water, place two cod fillets and bring to a boil. When it starts to boil, let it stay for a minute and then turn it off, remove the cod and reserve the water. Shred the cod, removing the bones and skin.
Strain the cod cooking water and add it to the pan with the peeled potatoes cut into small pieces and cook for around 10 to 15 minutes.
When the potatoes are cooked, reserve the water and crush the potatoes.
In a frying pan with olive oil, add the onions cut into half-moon slices, the chopped garlic cloves and the bay leaves. Let the onion cook. Add the shredded cod and mix everything together. Add the spinach and let it sauté. Season with pepper, nutmeg and mix everything together. Add the cooking water from the potatoes and cod, the olives and mix everything together.
Add the flour, cream and potatoes little by little. Involve everything.
Add the egg yolks and mix everything together. Beat the egg whites until stiff and add them to the mixture and mix everything together.
Preheat the oven to 180ºC.
Grease an oven tray with olive oil. Add the mixture and bake for about 20 to 30 minutes. Serve hot.
