INGREDIENTS:

  • 400 g straw potatoes
  • 10 units of Frankfurt sausages
  • 4 eggs
  • 2 onions
  • 2 cloves of garlic, chopped
  • 50 ml olive oil
  • vegetable oil q.s.
  • 1 bay leaf
  • Salt q.s.
  • Pepper q.s.
  • Parsley q.s.

PREPARATION:

In a frying pan with vegetable oil, heat the sausages, let them fry, remove and set aside.

In a bowl, beat the eggs with a whisk, season with salt, pepper and set aside.

In a pan with olive oil, sauté the onion, chopped garlic cloves and bay leaf for 5 to 6 minutes. Add the sausages and remove the bay leaf. Add the fried potatoes and mix carefully with a spoon.

Remove the pan from the heat for a moment, add the beaten eggs and mix everything very well. Bring to a simmer again for about 2 to 3 minutes. Place everything on a serving platter and sprinkle with chopped parsley. Serve with lettuce and tomato salad.
