INGREDIENTS:
- 8 Eggs
- 120 g of grated coconut
- 100 g of ground almonds
- 1 can (397 g) of condensed milk
- 400 ml coconut milk
- Liquid caramel
PREPARATION:
Preheat the oven to 180 degrees.
In a bowl, add the eggs, grated coconut, ground almonds, condensed milk and coconut milk. Mix very well until all the ingredients are well incorporated.
Now, pour this mixture into a previously prepared mold with liquid caramel at the bottom. Cover the pan with two sheets of baking paper and a sheet of aluminum foil - this will help the pudding become creamy.
Place the mold inside a larger tray and add boiling water until it reaches about a third of the height of the mold. This is what we call a water bath.
Bake at 180 degrees for 45 minutes, or until the pudding is completely cooked.
When it's ready, remove it from the oven, let it cool completely, carefully unmold it and it's ready to serve!
