INGREDIENTS:

  • 2 Eggs
  • 11 gems
  • 200 g sugar
  • 80 g self-raising flour
  • 1 pinch of salt
  • Baking paper
  • Butter to taste
  • Aluminum form nº30

PREPARATION:

Line a round pan without a hole with parchment paper and grease the paper with butter.

Preheat the oven to 180º C.

In a mixer, beat the whole eggs, yolks and sugar for about 15 to 20 minutes (the eggnog needs to triple in volume).

When it has tripled in volume, sift the flour directly into the dough and fold it gently by hand.

After mixing everything very well, pour the dough into the pan and bake for around 25 minutes.

Test the toothpick on the sides of the cake. The sides should be cooked, but the center should be moist.

Remove from the oven, wait a few minutes and unmold with the help of parchment paper.

Let cool and serve warm or cold.
