INGREDIENTS:
- 5 eggs
- 15 gems
- 250 g of sugar
- 100 g unleavened flour
- 1 pinch of cinnamon
- Baking paper
- Butter q.s.
- Aluminum form nº30
PREPARATION:
Line a round pan without a hole with parchment paper and grease the paper with butter.
Preheat the oven to 180º C.
In a mixer, at maximum speed, beat the yolks with the eggs, salt and sugar, for 15 minutes, until you obtain a fluffy, whitish cream.
When it has tripled in volume, sift the flour directly into the dough and fold it gently by hand. Add a pinch of cinnamon and mix very carefully from bottom to top.
After mixing everything very well, pour the dough into the pan and bake for around 20 minutes.
Test the toothpick on the sides of the cake. The sides should be cooked, but the center should be moist.
Remove from the oven, wait a few minutes and unmold with the help of parchment paper.
Let cool and serve warm or cold.
