INGREDIENTS:

  • 2 eggs
  • 2 cups of spaghetti
  • 2 Tbsp. (soup) grated cheese
  • 1 Tbsp butter
  • Olive oil and salt to taste

PREPARATION:

Place a pan over medium heat with water seasoned with salt and butter. Add the spaghetti, cover and cook for 8 minutes and set aside.

In a bowl, add one egg at a time. Beat the eggs with a fork until the whites and yolks are mixed. Season with salt.

Add the grated cheese and cooked spaghetti (cold) and mix everything with tongs.

Heat a frying pan over medium heat with olive oil. When the oil is heated, add the spaghetti with the eggs and press gently with a spatula. Let the spaghetti cook over medium heat for 2 minutes until golden.

Reduce the heat, cover the pan and keep on low heat for about 5 minutes, or until the base of the omelette is golden and the sides are firm.

Cover the frying pan with a flat plate, and with the palm of your hand hold the bottom of the plate and turn the frying pan at once. Place the omelet in the pan using a spatula. Increase the heat to brown the other side for 2 minutes.

Reduce the heat, and let the omelette finish cooking for another 3 minutes, until golden.

Place on a plate and serve with a tomato salad.
