INGREDIENTS:

  • 4 fish medallions
  • 1 yellow bread
  • 5 cloves of garlic
  • 2 onions
  • 2 bay leaves
  • 1/2 red pepper
  • 1/2 green pepper
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Olive oil to taste

PREPARATION:

Turn on the oven at 220ºC.

Season the medallions with salt, lemon juice, pepper, mix everything and set aside.

In a bowl, crumble the cornbread, add the chopped garlic cloves and drizzle with olive oil. Involve everything.

In a frying pan, add the olive oil, the half-moon onions, the bay leaves, the red pepper, the green pepper and let it sauté until the onion is soft.

Place the onion on a platter, add the fish medallions and the marinade on top and cover with the cornbread.

Place in the preheated oven at 220ºC until the cornbread is toasted and the medallions are baked.

And it's ready, you can serve it with a salad or with some mashed potatoes!
