INGREDIENTS:

  • 1 chicken cut into pieces
  • 50 ml of white wine
  • 1 tablespoon paprika
  • Salt
  • 1 onion cut into
  • 150 g diced ham
  • 150 g diced bacon
  • 1/2 sliced beef chorizo
  • 2 cloves of garlic, chopped
  • 100 ml of Port wine
  • 1 glass of brandy
  • 80 g of butter
  • Rosemary to taste
  • 2 bay leaves
  • 1 Tbsp of chilli pepper
  • 1 bunch of parsley
  • French fries to accompany

PREPARATION:

Drizzle 1 chicken cut into pieces with white wine, season with paprika and salt. Mix everything together and let it marinate for about 1 hour.

In a clay pot, place 1 onion cut into half moons. Meanwhile, preheat the oven to 200°C.

Add the diced ham, diced bacon and sliced meat chorizo.

Add the reserved chicken and its marinade. Add the chopped garlic cloves, Port wine, glass of brandy and butter. Sprinkle with rosemary, add bay leaves, chilli and a sprig of parsley.

Place the uncovered pot in the very hot oven for 1 hour. After 20 minutes, with the help of a cloth, shake the bottle.

In the last 20 minutes, cover the pan and place it back in the oven.

Serve the chicken in the pan accompanied by fries.
