Preparation Time: 10 mins | Cooking Time: 40 mins | To: 4-6 people
INGREDIENTS:
- 4 cod fillets
- 3 Tbsp olive oil
- 1 small can of cooked chickpeas
- 1 onion
- 1 red pepper
- 3 eggs
- 2 cloves of garlic
- Oil, salt, parsley and olives to taste
PREPARATION:
Preheat the oven to 200º C.
In an ovenproof dish, place the sliced onions and garlic cloves and the olive oil. On top, place the cod fillets.
Season with salt and pepper. Add the chopped pepper and drizzle with olive oil.
Bake in a hot oven (200ºC) for around 40 minutes, until golden brown.
In a pan, with olive oil, brown the sliced onion and the striped pepper. Add the chickpeas, boil for 5 minutes.
Place the chickpeas and cod on a platter. Decorate with halved boiled eggs, olives and chopped parsley and serve.
