INGREDIENTS:

  • 350 g round grain rice
  • 1 cod fillet
  • 1 onion
  • 1 clove of garlic
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • Parsley
  • 3 tomatoes
  • 100 g of olives
  • 1 carrot
  • Pepper

PREPARATION:

Rinse the cod fillet with plenty of water. Remove the skin and bones and break it into chips. Chop the onions and garlic. In a frying pan, melt the two tablespoons of butter and two tablespoons of olive oil. Add the onion, garlic and brown.

Add the cod and let it braise. Add the carrot and skinless tomatoes cut into pieces. Season with pepper and let it cook.

Water the cod with water (2 times the volume of the rice) and let it boil.

Add the rice (washed and drained), stir and let it cook.

Place the rice on a platter and garnish with parsley and chopped olives and serve with cod pataniscas.
