White Bean Rice

Method

  1. In a pan, with 7.5 dl of water, add the rice and bring to the heat. Stir occasionally, until it boils. Cover and cook for about 45 minutes, over low heat.

  2. Drain the can of beans. Peel the tomato and cut into pieces.

  3. In a frying pan, with melted butter, brown chopped garlic for 2 minutes. Add the tomatoes, salt and pepper and cook for about 15 minutes, until a thick sauce is obtained.

  4. Add the chopped coriander and stir. Add the tomato sauce and beans to the rice and mix.

  5. Cook for about 3 minutes to check.

  6. Put the rice and beans on a platter and serve.
