Green Pilaf

  1. Wash rice and raisins and drain. Chop the garlic, ginger and slice the onion.

  2. Heat the butter and brown the almonds and pistachios for 2 minutes over medium heat.

  3. Remove and add in butter, bay leaf and powdered chilli pepper.

  4. Add the raisins, almonds, pistachios, onion, garlic, ginger and yogurt. Spice with salt. Let it cook for about 5 minutes over low heat.

  5. Add the rice and drizzle with hot water.

  6. Stir and when it boils, cover the pan and cook for about 25 minutes over low heat. Sprinkle with lemon juice and serve.
