Broccoli Soup With Poached Eggs

  1. Separate the broccoli into sprigs and wash them; peel the carrot, courgette, onion, garlic and sweet potato and cut them into pieces.

  2. Pour the vegetables into a pan, add the water, season with salt, bring to the boil and let it cook.

  3. Add the spinach and cook for another 5 minutes. At the end, grind with the magic wand until you get a cream.

  4. Add the cooked beans and rectify the seasonings.

  5. Bring to the boil another pan with water seasoned with salt and bring to a boil.

  6. Swirl the water with a spoon and pour an egg inside. Let it cook for about 4 minutes.

  7. Remove carefully and place in the soup. Repeat with the remaining eggs and serve hot.
