Scrambled Egg Burger

  1. Whisk eggs with salt and pepper until completely combined and very foamy.

  2. Cut the chives into pieces, chop the onion, add to the eggs and mix everything.

  3. Melt butter in a skillet over low heat until bubbling. Add whisked eggs; cook, stirring frequently for even, moist curds, until thickened and creamy, 2 to 3 minutes.

  4. Heat the bread in the skillet.

  5. On the bread add the mayonnaise, the eggs, the mayonnaise to taste, the slice of cheese, the straw potatoes fries and the other half of the bread.
