Cod Fritters

  1. Wash the potatoes, cook them with the skin in water seasoned with salt, then drain them, let them warm, remove the skin and pass them in the passevite.

  2. Also take the cod to cook in water, drain it, remove the bones and skins, pour it on a cloth, close and beat well so that the cod is shredded very finely.

  3. In a bowl, add the mashed potatoes, cod, onion, garlic, eggs and egg yolks, season with nutmeg, salt and pepper, add a little chopped parsley and mash well.

  4. With two tablespoons take small portions of dough and shape the cookies.

  5. Arrange them on a tray well separated from each other and take when freezing.

  6. Then fry them frozen in oil until they are golden brown, remove them and let them drain on a sheet of kitchen paper.

  7. In a serving bowl, place the potatoes, the sliced tomatoes and the sauté. Season with salt and pepper.

  8. Serve as a starter or accompany with salad.
