Spaghetti Omelette

Method

  1. Bring a pan to medium heat, with water seasoned with salt and butter. Add the spaghetti, cover and cook for 8 minutes and set aside

  2. In a bowl, add one egg at a time. Beat the eggs with a fork until the whites are mixed with the yolks. Season with salt.

  3. Add the grated cheese and the cooked (cold) spaghetti and mix everything with the help of tongs.

  4. Bring a skillet to medium heat with olive oil. When the oil is heated, add the spaghetti with the eggs and press gently with a spatula. Let the spaghetti stand on medium heat for 2 minutes until golden.

  5. Reduce heat, cover the pan and keep it on low heat for about 5 minutes, or until the base of the omelette is golden and the sides are firm.

  6. Cover the pan with a shallow dish, and with the palm of your hand grasp the bottom of the dish and turn the pan over in one go. Place the omelet in the pan with the help of a spatula. Increase the heat to brown the other side for 2 minutes.

  7. Reduce the heat, and let the omelet finish cooking for another 3 minutes, until golden.

  8. Place on a plate and serve with a tomato salad.
