Tuna Salad With Black Eyed Peas

  1. Soak the beans overnight. The next day, bring water to a boil in a container and season with salt. When the water starts to boil, add the beans and cook. When it is cooked, drain the water and let it cool.

  2. Drain the tuna cans and cut the tuna into chips. Cook the eggs.

  3. For the vinaigrette, finely chop the onion and parsley. Then season with olive oil, vinegar, pepper and salt. Mix everything together until you are well involved.

  4. In a serving dish, add the black beans, the tuna and the vinaigrette you prepared previously, the eggs cut into slices and mix everything.

  5. Decorate with black olives.
