Squid Stew With White Rice

Method

  1. In a pan with hot oil, sauté the onion and chopped garlic.

  2. Add the tomato pulp, the chopped red pepper, bay leaf, salt and pepper, cook for 10 minutes.

  3. In the meantime, clean the squid, add the beer and cook over low heat until the squid is tender. 

  4. Apart, in a pan with hot oil, fry the rice for 2 minutes, season with salt and chopped parsley. Add hot water until covered 2 fingers above the measure of the rice and bring to a boil. Cover and lower the heat and when cooked, remove from heat and season with butter.

  5. Place the squid on a serving plate and garnish with chopped parsley, accompany with the white rice and serve hot.
