Roasted Red Fish with Potatoes

  1. Preheat oven to 180º C.

  2. Wash the potatoes and place them on the fire in plenty of water. Season with salt and cook for 45 minutes.

  3. Drain the potatoes and let it cool.

  4. Place the potatoes on an oven tray and lightly mash them with a fork. Drizzle with oil and sprinkle with salt.

  5. Bake at 180ºC for about 15 minutes.

  6. Cut the fish into three parts and place on a baking tray. In the middle of the fish place lemon slices. Season with salt and pepper.

  7. Arrange the onion rings and garlic on top. Drizzle with white wine. Sprinkle with the paprika and finally drizzle with the oil and the broken bay leaves to spread the aroma.

  8. Bake at 180ºC for about 30 minutes.

  9. On a platter, place the potatoes. Add the fish on top. Drizzle with the fish roast sauce and garnish with chopped parsley.
