Grilled Salmon with Tomato Rice

Method

  1. Season the salmon with salt and lemon juice. Leave to marinate while preparing the rice.

  2. In a pan with heated oil, sauté a chopped onion and garlic clove. Add the tomato pulp and water. Season with salt and bring to a boil. Add the rice, cover and let cook for 10 minutes.

  3. Grease a grill with oil. Place the garlic cloves in the slices and put the salmon slices on top. Grill until browned.

  4. On a platter, place the salmon slices and decorate with sliced tomatoes. Serve with tomato rice.
