Fried Petingas with Tomato Rice

Method

  1. Season the small sardines with salt and lemon juice. Leave to marinate while preparing the rice.

  2. In a pan with heated oil, sauté a chopped onion and garlic clove. Add the tomato pulp and water. Season with salt and bring to a boil. Add the rice, cover and let cook for 10 minutes.

  3. Remove excess salt to the petingas, pass them through flour and fry them in oil. Place them on top of a sheet of absorbent paper.

  4. On a platter, put the petingas and decorate with slices of lemon and lettuce leaves. Serve them with tomato rice.
