Traditional Portuguese Sponge Cake

  1. Line a round pan without hole with parchment paper and butter the paper.

  2. Preheat the oven to 180º C.

  3. In a mixer, beat the whole eggs, yolks and sugar for about 20 to 30 minutes (the eggnog has to triple in volume).

  4. When the volume has tripled, without stopping the mixer, add the flour little by little.

  5. Ideally, add spoonfuls of flour. Add the next spoonful, only when the previous one is completely mixed in the eggnog.

  6. After adding all the flour and mixing everything very well, pour the dough into the form and cover the form with another form or with parchment paper and take it to the hot oven at 225ºC for 40 to 45 minutes.

  7. Use a toothpick to see if the cake is ready (just stick it in and see if any dough is glued), remove the cake and let it cool covered.

  8. Serve warm or cold.
