Pear pie

Method

 

  1. For the dough: add 100 g of sugar with butter, egg, yolk and 260 g of flour, knead well. Add the lemon zest and knead a little more, until everything is well mixed. Wrap the dough in cling film and let it rest in the refrigerator for 15 minutes.

  2. For the filling: mix the sugar with the flour, eggs and milk. Bring to a low heat, until it thickens, stirring constantly so as not to burn. Add the vanilla aroma, remove from heat and let cool, stirring occasionally.

  3. Preheat the oven to 180ºC.

  4. Roll out the dough on a floured table until it is thin. Line a rectangular tart pan with parchment paper and pour the dough and trim the surplus. Pour the cream and cover with the thin slices of pear.

  5. Bake at 180ºC, for about 35 minutes. Allow to cool. Drizzle the tart with honey and serve.
