Cod Pataniscas

  1. In a pan, cook the cod in boiling water for 5 minutes. Remove and let cool, reserving the cooking water. Clean it from skins and bones and shred it in splinters.

  2. In a bowl, mix the flour, milk, chopped parsley, eggs and wine and stir until smooth.

  3. Add the finely chopped onion and garlic and some of the cod cooking water and stir.

  4. Wrap well and let it rest for at least 2 hours.

  5. In a frying pan bring the oil to the heat and fry the pataniscas, pouring small portions of dough with the help of a ladle.

  6. Let it fry until slightly golden and remove to a plate with absorbent paper.
