Cod Fish Stew

Serves 6


  1. Preheat the oven to 180º C.

  2. Wash the potatoes and place them on the stove in abundant water. Season with half the salt and cook for 10 minutes.

  3. Drain the potatoes and let them cool.

  4. Place the potatoes on an oven tray and crush them lightly with a fork. Drizzle with olive oil and sprinkle with remaining salt.

  5. Bring a pan of water to medium heat and boil for 5 minutes with the bay leaves and the cod pieces. Close the pan. Remove from heat and let cool.

  6. In a frying pan, with oil, sauté the onion and the garlic cut into thin slices. Add the cod, clean of skin and bones and chipped. Drizzle with vinegar.

  7. In a serving bowl, place the potatoes, the sliced tomatoes and the sauté. Season with salt and pepper.

  8. Decorate with chopped parsley and black olives.
