Cod Fish Pie

Method

  1. Bring water to a boil in a container and season with salt. When the water starts to boil, add the potatoes and cook. When they are cooked, drain the water and let it cool.

  2. Reduce the mashed potatoes. Add a spoonful of butter and milk until you have a soft puree. Season with salt and pepper.

  3. Chop the onion, garlic and parsley.

  4. In a frying pan, with olive oil brown the onion, garlic, parsley. Add the tomato pulp and the bay leaf and let it cook for 15 minutes.

  5. Add the white wine and the clean cod and split into chips. Season with pepper and cook for 5 minutes.

  6. In a buttered dish, spread half of the puree, pour the cod filling and cover with the remaining puree.

  7. Brush the surface with a beaten egg yolk.

  8. Bake in a hot oven (200ºC) for about 20 minutes.
