Cod And Tomato Rice

  1. Rinse the cod fillet with abundant water. Remove the skin and pimples and break it into splinters.

  2. Chop the onions and garlic. In a frying pan, melt the butter and the oil. Pour the onion, garlic and saute.

  3. Add the cod and let it sauté. Add the carrots and peeled tomatoes cut into pieces. Spice with pepper and cook.

  4. Add water to the cod (2 times the volume of the rice) and bring to a boil.

  5. Add the rice (washed and drained), stir and cook. Put the rice on a platter and garnish with parsley and chopped olives and serve.
