Carrot Pie

  1. Preheat the oven to 180ºC.

  2. Line an baking tray with parchment paper and grease it with butter. Reserve.

  3. In a pan with water, cook the carrots for 10 minutes. Remove the water and reduce to puree.

  4. In a bowl, beat the eggs with the sugar. Add the flour with the baking powder and beat some more.

  5. Add the lemon zest and carrot puree and mix well. Pour the dough onto the baking tray and bake in the oven for 20 minutes.

  6. Sprinkle with sugar, roll up and remove the paper. Sprinkle with powdered sugar. Let cool and serve.
