Puff Pastry With Eggs Cream

  1. Preheat the oven to 200ºC.

  2. For the filling: place a saucepan over medium heat, add the egg yolks, sugar and water. With the help of a “fouet”, stir everything very well, until the cream thickens. As soon as it thickens, remove from heat and stir a little more and let it cool.

  3. Cut the puff pastry into circles (about 6 circles on each sheet), place them on a floured tray and brush with the yolk and milk mixture.

  4. Take to the oven, preheated to 200ºc, for 20 minutes.

  5. Remove the puff pastry from the oven and let it cool. Sprinkle later with egg candy and pieces of puff pastry.

  6. Decorate with cinnamon and powdered sugar.
