Marble Cake with Dried Fruit

  1. Preheat the oven to 180º C.

  2. In a bowl, add the flour, milk and baking powder. Mix everything with electric mixer.

  3. Add eggs and continue to beat slowly with mixer.

  4. Add sugar, porto wine, season with salt and continue to beat until the dough starts to bubble.

  5. Add in the chopped figs, chopped walnuts, peanuts and mix everything slowly with a wooden spoon.

  6. Stir in candied fruit cut into pieces and mix everything slowly.

  7. In a pan with milk, melt the chocolate stirring constantly.

  8. Butter a cake pan and sprinkle with flour and pour half of the dough,smoothing the top.

  9. Add the chocolate to the dough in the bowl and mix slowly.

  10. Place the rest of the dough with the chocolate on cake pan.

  11. Bake at 190ºC for about 35 minutes. When baking for 20 minutes, put the candied cherries on top of the cake.

  12. Bake for an additional 15 minutes, or until a cake tester inserted into the center comes out clean.

  13. Remove the cake from the oven, and after 20 minutes loosen its sides, and turn it out of the pan into a rack to cool.

  14. Cool the cake completely before slicing. Sprinkle with white icing sugar, if desired.
